i made a stress-bread today

after eating some honest-to-god real food and taking some naps, i felt a little better. i realized that i’d left a ball of bread dough in the fridge for the last couple of days- intending to make it back on monday, but crashing before i got there. i figured it would be good to take care of it before it gave up the ghost.

after getting not-great results with the NYT sourdough adaptation of the lahey no-knead method, i decided to try the king arthur flour recipe. it led to miraculous results. finally getting a loaf that looks beautiful and rises well.

if you care to try:

I think I will. The last bread I made disappointed me.

@urlnotfound i've been pretty happy with everything i've tried from them so far. which one did you try that didn't work out?
urlnotfound pro 5 years ago
@nikkuneko oh no. I just mixed flour water yeast, etc and made bread. It wasn't a recipe or anything.

@urlnotfound ah, gotcha.

if you've got a dutch oven, jim lahey's no-knead is a good way to get results without having to work too hard. that's how i started. there are also a few starter recipes on the king arthur site (like https://www.kingarthurflour.com/recipes...) that use a packaged yeast.

good luck!

@nikkuneko, thanks I will look and try it. If it doesn't turn out stupid I'll post pictures. :)

@urlnotfound please do! the one thing i can offer is "be patient!" - giving enough rise time, proofing time, and baking time is key. you can do it!
