after eating some honest-to-god real food and taking some naps, i felt a little better. i realized that i’d left a ball of bread dough in the fridge for the last couple of days- intending to make it back on monday, but crashing before i got there. i figured it would be good to take care of it before it gave up the ghost.
after getting not-great results with the NYT sourdough adaptation of the lahey no-knead method, i decided to try the king arthur flour recipe. it led to miraculous results. finally getting a loaf that looks beautiful and rises well.

if you've got a dutch oven, jim lahey's no-knead is a good way to get results without having to work too hard. that's how i started. there are also a few starter recipes on the king arthur site (like https://www.kingarthurflour.com/recipes...) that use a packaged yeast.
