Seen this brought up multiple times in cooking shows: If you want it to taste homemade, use a tablespoon of butter. If you want it to taste like how that one restaurant does it, use half a stick.
Hmm...not to speak for all chefs but I'd like to think they do care if we live or die...and instead, they just care that while we live, we enjoy the fuck out of our food.
