This drink from Tropical Standard incorporates both an egg white and gum syrup for texture, and has a somewhat unusual preparation: dry flash blend, add ice and continue flash blending, then double-strain into your glassware. This results in a highly emulsified drink with a nitro-like texture. All of the ingredients are slightly outside the typical tiki flavor profile, and the inclusion of mezcal and spiced cranberry bitters truly transport you to the drink’s namesake time and place.
Full recipe:
- 5 drops saline solution
- ½ tsp. Bittermens New England Spiced Cranberry Bitters
- ½ oz. egg white
- ½ oz. strained tangerine juice
- ¾ oz. strained lime juice
- ¾ oz. gum syrup
- 2 oz. mezcal
- garnish: grated cassia cinnamon
