Poblano peppers become Ancho if they're picked when red and dried; they're called Mulato if they're picked when they're dark brown and dried. Mirasol peppers are Guajillo when dried. Chilaca peppers are called Pasilla when dried. Jalapenos, when dried and smoked, are called Chipotles if they're picked when green, and Morita if they're picked when dried. Bola peppers are called Cascabel when they're dried.
