Nostalgic poor food

Beans-and-corn.
When I was a kid this was one of the least expensive ways my parents found to get big bowls of complete protein to three kids.
My dad would get cheapo baked beans and add frozen corn and then add ketchup and mustard and barbecue sauce and brown sugar. I used Busch’s instead (ROLLLL that beautiful bean footage), but still ended up adding a little bbq sauce.
It was filling and hot and delicious and the corn adds both sweetness and more texture than just the smooshy beans on their own.

Even my kid who doesn’t like baked beans not only liked it, but spent a bunch of time talking about how much he liked it, so that’s kind of fun.

My version of this uses the frozen corn that has other veggies in it like bell peppers and onions (*not* peas & carrots) , often called something like "Southwestern" depending on the brand, mayhap you'd like that as well?

(Sometimes I add some cumin & chili powder for an "instant chili" if you will.) Then if you have leftovers throw an egg on in the morning and/or put some in a tortilla for insta-burrito.

@williwaw that all sounds good! Tonight it was mostly just for nostalgia’s sake, and m’lovely wife doesn’t love beans, so the fact that she’s out of town is the only reason I was happy to make it this evening’s entree, so prolly won’t riff on it much moving forward. 😂

That said, I DO love bean tacos/burritos!!

I still make what my Mom called "beef and rice fiesta," two cups dry rice cooked, one pound frozen kernel corn, and one pound browned ground beef, the cheapest you can find. Spice to taste. She likely only did salt and pepper but I also add garlic powder, onion cumin, and smoked paprika. If I am fancy I will brown onions and peppers before doing the meat.
