Pizza Jungle

Menu from the short-lived 1957 pizzeria called Francine's Pizza Jungle, located in Portland, Oregon.
During COVID, my friend unearthed the menu of a Portland restaurant from the 1950s called “Francine’s Pizza Jungle.” Its pizza selection was…eclectic.
As you can see, in most cases they just picked a trio of stereotypical foods from each country (and very likely unceremoniously dumped them on a plain red sauce pie). Some have some baffling topping choices (Chopped celery on the Alaskan pizza? Lobster on the Greek pizza?). And perhaps most interestingly, this is the oldest record of a pizza with pineapple on it (beating Canada’s claim by five years).
Anyway, my pizzamaking friends and I decided to get together over Memorial Day and recreate a bunch of these. I took on the Hungarian Pizza (beef, chopped celery, carrots) and Jungle Pizza (cocktail fruit, applesauce, chopped nuts). I’ll share photos of each separately.

BBQ Pulled Pork: Sweet BBQ sauce, mozza, leftover pulled pork, pineapple, lighly dusted with Flatiron's "Sweet Heat" pepper blend.
Carne Asada: Sauce is refried beans, sour cream, splash of hot sauce, mozzarella, cotija, leftover carne asada, green onions, pico de gallo (rest on paper towels while prepping to absorb some moisture), little bit of guac on my side, dash of Flatiron's Four Pepper Blend.
