But Rye?
I went through a rye sub-phase during my breadmaking days and all I can say is that dough made with rye is incredibly sticky. I used to feed the starter with rye flour and mix it by hand and oh my god it was the fucking worst mess imaginable, i had to claw the starter off my hands with a bench scraper and between that and the acidity of the levain my hands were a goddamn mess.
